Slim, silver fish with a bright sheen and a scattering of small dark spots along the flank. Gutted and cleaned, they go straight onto a hot grill or into a shallow pan with nothing more than salt, lemon and a few slices of ginger. The flesh is firm and oily, crisping beautifully under high heat, and the flavour is bold and savoury. The small bones soften enough on cooking that the whole fish can be eaten.
